|8||Boneless Skinless Chicken Breast Halves, baked at 350 degrees, covered, for 1 hour...cooled and diced.|
|2 - 10 oz. pkgs||Frozen Broccoli Spears or 1 1/2 Pounds Fresh Broccoli, cooked until tender|
|2 -10½ oz. cans||Cream of Chicken Soup|
|1 tsp||Lemon Juice|
|1 tsp||Curry Powder|
|1-2 cups||Shredded Cheddar Cheese, mild or sharp|
Spread cooked broccoli in the bottom of a 9x13 baking dish. Distribute chicken over the broccoli. In a bowl, combine soup, mayo, curry powder, and lemon juice. I usually add 1-2 tablespoons of milk to make the soup mixture easier to spread. Spread soup mixture over the chicken and broccoli. Sprinkle cheese over the top. Bake uncovered at 350 degrees for 30-45 minutes.
We always serve warm french bread with this...yum!
