Chicken 'n' Broccoli

This has been my "birthday" dinner every year since I was a child.

  • Servings: 6-8

Ingredients:

8 Boneless Skinless Chicken Breast Halves, baked at 350 degrees, covered, for 1 hour...cooled and diced.
2 - 10 oz. pkgs Frozen Broccoli Spears or 1 1/2 Pounds Fresh Broccoli, cooked until tender
2 -10½ oz. cans Cream of Chicken Soup
1 cup Mayonnaise
1 tsp Lemon Juice
1 tsp Curry Powder
1-2 cups Shredded Cheddar Cheese, mild or sharp

Directions:

Spread cooked broccoli in the bottom of a 9x13 baking dish. Distribute chicken over the broccoli. In a bowl, combine soup, mayo, curry powder, and lemon juice. I usually add 1-2 tablespoons of milk to make the soup mixture easier to spread. Spread soup mixture over the chicken and broccoli. Sprinkle cheese over the top. Bake uncovered at 350 degrees for 30-45 minutes.

We always serve warm french bread with this...yum!
