Chicken Ragu with Linguine

This dish served family style will be a hit at any dinner table.
 

Ingredients

  • 2 tbsp extra virgin olive oil 1 1/2 lb chicken tenderloins 1/2 cup sweet onions, chopped 1 tbsp minced garlic 1 tsp salt 1/4 tsp black pepper 1 cup chicken broth 1 can (14.5oz) diced Italian tomatoes with basil, garlic,oregano 1 jar (24oz) 5 cheese pasta sauce 12 oz linguine 1 cup fresh grated Parmesan cheese

Method

Heat the olive oil in a large Dutch oven. Chop the chicken into small pieces and add to oil. Cook until no longer pink, about 8 minutes. Add the onions and garlic and saute 3 minutes. Stir in the chicken broth and tomatoes. Bring to a boil and cook for 5 minutes. Add the pasta sauce, reduce heat and simmer 20 minutes. Stir occasionally. Cook linguine as directed on box. Drain. Add to the sauce and toss to coat. Transfer pasta to a large serving bowl and sprinkle with Parmesan cheese.

 

Notes: Sauce can be made ahead of time and will just get better as the flavors blend. This is a very inexpensive dish to fix and really is great. I also use the wheat linguine and it works well.
