Chicken Satay with Peanut Sauce

Skewers of chicken, marinated in a sweet and spicy peanut sauce and grilled until tender.

Ingredients
  • Chicken Satay:
  • 1/2 lb boneless skinless chicken breast, cubed
  • 2 cloves garlic, finely minced
  • 1/2 tsp finely minced fresh ginger
  • 1/2 tsp ground black pepper
  • 1 tbsp dark brown sugar
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp melted butter
  • Peanut sauce:
  • 1/4 cup smooth peanut butter
  • 1 tbsp low sodium soy sauce
  • 1 tbsp dark brown sugar
  • 1 tsp hot chili paste
  • 1 clove garlic, minced very fine
  • 1 tsp lemon juice
  • 1/4 cup water
 
Method

Soak wooden skewer for at least 30 minutes. Mix satay ingredients in a bowl then marinate chicken at least 15 minutes. Thread chicken cubes on skewers. Preheat grill then grill satay about 5 minutes on each side or until well cooked; keep warm. In small saucepan, add sauce ingredients. Heat over medium low heat and stir continuously until slightly thickened. Instead of grilling, satay can also be broiled. Preheat the broiler, wrap each exposed skewer with foil, then broil satay until done, turning occasionally.

 
Notes:

Serve the satay with stir fried asparagus, steamed rice and pineapple slices for garnish.
