Chicken Spaghetti a la Martha

This homemade dish is great for large family occasions. The homemade sauce compliments the chicken and pasta perfectly.
 

Ingredients

  • 1 1/2 cups onion
  • 1 1/2 cups celery
  • 2 sticks margarine
  • 4-5 cups chicken broth
  • 1-2 cups chopped chicken
  • 1/4 cup flour
  • Salt and pepper to taste
 
Method

Saute onion and celery in 1 stick of margarine. Cook until soft, about 30 minutes. Add chicken broth just to cover. Cook down until most broth has been absorbed, then pour into a bowl. Make a medium white sauce with chicken fat, margarine and broth. Use about 1/2 cup fat, 1 stick margarine, 1/4 cup of flour and 1/2 cup of broth. Cook until mixture turns a tan color, about 30 minutes. Add remaining broth, salt and pepper to taste. Add 2 cups chopped chicken and simmer 5 minutes until flavors blend.
