Chimayo Corn

Canned cream-style corn is used in this dish, which also has cornmeal, green chilies, eggs, shredded cheese, onion milk, and melted butter.
 

Ingredients

  • 2 1/2 cups cream-style corn
  • 2 eggs, beaten
  • 2 1/2 cups shredded cheddar or Monterey Jack cheese
  • 1 medium onion, finely chopped
  • 1 cup yellow cornmeal
  • 1 1/4 cups diced green chilies
  • 1/2 cup melted butter
  • 3/4 tsp. baking soda
  • 3/4 cup milk

Method

Preheat oven to 350 degrees. Mix all ingredients thoroughly. Pour into a greased 9x13-inch baking dish or pan. Bake at 350 degrees for 45 minutes.
