Cocktail Crab Cups

Baking bread into a muffin tin makes a great crusty cup for this tasty crab appetizer. Pass these at parties for a great start to every meal.
 

Ingredients

  • 12 thin slices white bread, crusts removed
  • 1 cup flaked crab meat
  • 1/3 cup fine dice celery
  • 1/4 cup chopped sweet onion
  • 1/4 cup chopped roasted red bell peppers
  • 2 tbsp chopped parsley
  • 2 tbsp sliced black olives
  • 3 tbsp cocktail sauce
  • 1 tsp Dijon mustard
  • Garnish: parsley sprigs

Method

Gently press bread slices into 12 muffin cups. Bake at 350 degrees for 10 minutes or until crisp and golden brown then cool completely. Combine crab meat and remaining ingredients in a small bowl until well mixed. Fill bread cups, garnish and serve.
