Comforting Cheesy Chicken and Noodle Soup

This simple soup is prepared with homemade bread crumbs and tasty fontina cheese. The soup is canned making it a quick and simple meal.Ingredients
- 6 1/2 -inch thick Italian bread slices
- 3 tablespoons extra virgin olive oil
- Soup:
- 3 cans 1-lb 3 oz rich and hearty chicken noodle soup
- Topping:
- 1 1/2 cups Parmesan-Romano grated cheese ***see note
- 6 1/2 inch slices fontina cheese ***see note
- 2 tablespoons chopped parsley

Method
Turn oven to broil. Place bread on baking sheet, drizzle olive oil on the Italian bread, broil until medium brown. Remove from oven and let cool for 2 to 3 minutes then dice into bite size pieces. Divide soup among 6 ovenproof bowls and microwave on high 2 to 3 minutes, or until hot. Divide bread pieces and place on soup, sprinkle 1/2 cup grated cheese on each bowl, top with fontina cheese then divide and sprinkle the parsley on and broil until cheese is bubbly and a nice golden brown color. Remove from oven and serve with a small side salad if desired.
