Cheesy tortellini with mozzarella cheese sopressata, fresh basil and a light sun-dried tomato and balsamic vinaigrette.

  • Servings: 10+


7 oz jar Sun-dried Tomatoes, packed in olive oil
5 cloves Garlic
3 Tbsp Dijon Mustard
Juice of 1 Lemon
2 Tbsp Balsamic Vinegar
1 cup Light Olive Oil
1 lb Cheese Filled Tortellini, cooked and drained
½ lbs Diced Fresh Mozzarella Cheese 1/4 Lb Stick Sopressata or Salami, ½" dice
¼ cup Finely Minced Fresh Basil Finely Minced
12 Cherry Tomatoes, halved
¼ cup Grated Fresh Parmesan Cheese



Place everything, except the oil, in a food processor fitted with a steel blade. With processor running, slowly add olive oil.


Combine all ingredients in a large bowl and toss with dressing to taste. Extra basil and Parmesan cheese can be sprinkled on top, if desired. Serve at room temperature.
