Ingredients:
| Dressing: | |
| 7 oz jar | Sun-dried Tomatoes, packed in olive oil |
| 5 cloves | Garlic |
| 3 Tbsp | Dijon Mustard |
| Juice of 1 Lemon | |
| 2 Tbsp | Balsamic Vinegar |
| 1 cup | Light Olive Oil |
| Salad: | |
| 1 lb | Cheese Filled Tortellini, cooked and drained |
| ½ lbs | Diced Fresh Mozzarella Cheese 1/4 Lb Stick Sopressata or Salami, ½" dice |
| ¼ cup | Finely Minced Fresh Basil Finely Minced |
| 12 | Cherry Tomatoes, halved |
| ¼ cup | Grated Fresh Parmesan Cheese |
Directions:
Dressing:
Place everything, except the oil, in a food processor fitted with a steel blade. With processor running, slowly add olive oil.
Salad:
Combine all ingredients in a large bowl and toss with dressing to taste. Extra basil and Parmesan cheese can be sprinkled on top, if desired. Serve at room temperature.
