CranOrange Broccoli

Dried cranberries are combined with orange juice, segments and peel to flavor broccoli flowerettes. Slivered almonds add crunch.
 

Ingredients

  • 2 fresh oranges
  • 1/2 cup slivered almonds
  • 2 tablespoons olive oil
  • 3 cups fresh broccoli florets
  • 1 cup dried cranberries
  • 2 tablespoons water
  • Fresh orange slices for garnish

Method

Zest the oranges into a medium bowl; set bowl aside. Using a sharp knife cut away all the white orange pith. Remove the orange segments from the membrane by slicing between segment and membrane, reserving the juice from the oranges, placing the segments and juice in the bowl with the orange zest. In a large skillet, heat the olive oil over medium-high heat. Add broccoli; cook, stirring to avoid sticking, about 3 minutes. Add the orange mixture, almonds, cranberries and water. Continue cooking until tender-crisp. Garnish with fresh orange slices. Serve immediately.
