Creamy Au Gratin Potatoes

A perfect side dish for a special dinner or everyday--sliced potatoes baked in a creamy Cheddar cheese sauce.
Ingredients
- 6 medium potatoes, peeled and sliced about 1/8 inch thick
- Milk
- 1 1/2 cups mild Cheddar, shredded
- 1 tablespoon margarine + 1 tablespoon margarine, melted
- 1/3 cup onion, very finely chopped
- 1 teaspoon dry parsley
- 3 tablespoon dry breadcrumbs
- Salt and pepper to taste

Place sliced potatoes in a large saucepan, pour just enough milk to almost cover. Boil potatoes on medium high heat until just tender enough to pierce with a fork. Preheat oven to 375 degrees and grease a medium casserole dish. Strain potatoes, reserving 1 1/2 cups liquid. Add cheese to hot liquid and stir to melt. Saute onion in 1 tablespoon margarine until lightly browned and cooked then add to cheese liquid. Salt and pepper to taste. Pour cheese liquid over potatoes and toss to completely coat. Sprinkle with remaining 1/2 cup cheese. Mix melted margarine and bread crumbs together and sprinkle over cheese. Top with sprinkled parsley. Bake for 25 minutes or until browned on top and bubbly.
Notes: These potatoes go perfectly with any kind of chicken. I personally like them with BBQ chicken.
