Creamy Cheesy Potato Soup

Another time, leave the cubed ham out of this chowder-like soup and top it with bacon pieces instead.
Ingredients
- 4 large potatoes, peeled and cut into small chunks
- 1 tsp. oil
- 1 onion, chopped
- 1 tbsp. flour
- 2 cups milk
- 1/4 cup cubed process cheese food
- 1 cup cubed cooked ham
- Salt and black pepper

Boil potatoes in a small amount of water for 6 to 8 minutes or until tender; drain and set aside. In a saucepan cook onion in hot oil until tender. Stir in flour. Add milk, a little at a time, stirring until smooth. Add cheese; cook until cheese melts. (If needed, add more milk.) Mash one-fourth of the cooked potatoes; stir into soup. Stir in remaining potatoes and ham; heat through. Season to taste with salt and pepper.
Notes: The cheese adds a little something to the soup!! Serve with warm sourdough bread or a baguette.
Number of Servings: 4-6 depending on how hungry!!
