Creamy Shrimp and Peppers Over Penne Pasta


Shrimp and sweet and hot peppers in a cream cheese sauce makes an easy and tasty meal over pasta.



Ingredients:

  • 2 tablespoons olive oil
  • 1 1/2 pounds deveined and peeled jumbo shrimp
  • 1/4 cup chopped fresh chives
  • 2 cloves garlic, minced
  • 4 red chiles, cored and chopped
  • 3/4 cup chopped orange sweet pepper
  • 8 ounces reduced-fat cream cheese
  • 1/2 cup 2 % milk
  • 1/4 teaspoon salt
  • 1 (13.25 ounce) package Penne pasta, prepared according to package directions

Method

In a large skillet over medium heat add the olive oil. Stir in the shrimp and cook for 3 minutes. Add the chives, garlic, and peppers. Cook 3 minutes more. Reduce heat to low and add the cheese and milk and stir just until cheese is melted and mixture is smooth. Stir in the salt. Serve immediately over pasta.
