Frozen chopped spinach is cooked with onion and combined with mashed potatoes and winter squash in a skillet.
1. Thaw frozen spinach and drain well; set aside.
2. Peel potatoes and squash and cut in chucks. Boil in water for 15 minutes or until soft.
3. Heat oil in a nonstick skillet on medium-low, add onions and saute. Add garlic and saute for several minutes. Add spinach, mix well and saute for several minutes. Set aside.
4. Drain potatoes and squash as much as possible. Return to pot and place in low heat if necessary for several minutes to continue evaporating excess water. Add pepper, 1 tsp. salt and the vinegar. Mash and mix together well.
5. Add potatoes and squash mixture to spinach mixture in skillet. Mix well; press to form into a round. Transfer and serve.
6. Optional--You may combine the spinach and potato-squash mixtures in a bowl, then heat additional olive oil in the skillet. Spoon in mixture, pressing into a round; brown lightly before serving.
