Crispy Goat Cheese Salad

Mixed greens topped with breaded goat cheese, pears and a pear flavored vinaigrette. A great starter salad that will impress your guests.
Ingredients
- 5 oz goat cheese log
- 1 egg
- 3/4 cup Italian bread crumbs
- 2 Tbsp olive oil
- 7 oz bag arugula or spring mix salad
- 1 pear, sliced
- 1/2 small red onion, sliced very thin
- 1/2 cup pear nectar
- 1/4 cup white wine vinegar
- 3/4 cup olive oil
- 1/2 tsp sugar
- 1/2 tsp salt
- 1/2 tsp pepper

Method
Slice goat cheese in 1/4 inch thick slices. Whisk egg. Dip goat cheese slices into egg and then bread crumbs. Heat oil in small fry pan, add goat cheese fry 1 minute on each side or until browned. Place on a paper towel to absorb oil. To assemble salad, place arugula on six individual plates or one large serving platter. Top with pear slices, onion slices and goat cheese. Prepare dressing by whisking nectar, vinegar, oil, sugar, salt and pepper. Serve dressing on the side.
