Ingredients:
| 8 slices | Firm White Bread, crusts trimmed |
| 6 Tbsp | Softened Butter, divided |
| 12 | Thin Slices Cooked Ham |
| 4 | Thin Slices Pepper Jack Cheese |
| 1 Tbsp | All Purpose Flour |
| ½ tsp | Salt |
| ⅛ tsp | Pepper |
| dash | Cayenne Pepper |
| 1 cup | Half & Half or Whole Milk |
| ½ cup | Shredded Pepper Jack Cheese |
| 1 | Chipotle Pepper In Adobo Sauce, minced |
| 3 | Eggs |
| 3 Tbsp | Milk |
Directions:
Spread one side of bread with 2 tablespoons of butter. Top 4 slices with 2 slices ham, 1 slice cheese and 1 slice ham. Cover with remaining bread slices and set aside. Melt 1 tablespoon of butter in a medium saucepan then blend in flour, salt, pepper and cayenne. Slowly stir in half and half, and cook, stirring constantly, until thickened and bubbly. Add shredded cheese and chipotle pepper then stir until cheese melts. Keep warm over low heat. Melt remaining butter in a large heavy skillet. Beat eggs and milk together in a pie plate. Dip prepared sandwiches into mixture, coating both sides. Saute sandwiches in hot skillet, turning once, until golden brown and crispy, adding more butter if needed. Cut sandwiches on the diagonal and drizzle with warm cheese sauce.

The Croques-Monsieur's first recorded appearance on a Parisian cafe menu was in 1910 as a fast-food snack served in cafes and bars. More elaborate versions came with a bachamel sauce, so to match this theme, I made my sauce with pepper jack cheese and chipotles.
