
Grated cucumber is combined with yogurt, cayenne pepper and toasted cumin seed. It may be served as an appetizer with pita wedges or Indian naan.
Grate cucumber and let the mixture sit for a few minutes. Mix salt and red pepper into yogurt. In a frying pan which over medium heat, put cumin seeds in and stir them around until they start to crackle and give out a toasty, woodsy aroma.
Remove seeds from pan immediately. Take half the seeds and grind them up; leave the rest to garnish. Squeeze excess water from grated cucumber. Mix drained cucumber, the yogurt, and ground cumin seeds together. Garnish with the whole roasted cumin seeds and serve.
Notes:
Raita can be a fantastic way to whet an appetite. You can eat it on its own, or use it as a dip with pita (or naan) triangles. It can also be an accompaniment to a hot curry meal. It's great for summertime.
