Curry Chicken

A whole chicken leg consists of both the thigh and the drumstick.
 

Ingredients

  • 1 5- to 6- pound whole broiler-fryer chicken, cut up or 6 whole chicken legs
  • 1/2 cup chopped onion
  • 1/4 cup chopped fresh chives
  • 2 tbsp. abodo all-purpose seasoning
  • 1/4 cup vegetable oil
  • 2 cloves garlic, minced
  • 1/4 cup curry powder
  • 2 cups water
  • Salt
  • Black pepper

Method

Place chicken in a bowl; add onion, chives, and adobo seasoning. Cover and refrigerate for 25 minutes. Cook garlic in hot oil until tender. Allow the garlic to get brown. Stir in half of the curry powder. Add chicken mixture to pot. Add water; simmer 20 minutes. (Add additional water if needed.) Add the potatoes and the remaining curry. Cook until chicken and potatoes are done, stirring occasionally. Season to taste with salt and pepper.

 

Notes: Serve over rice or with paratha/roti (indian bread)
