Dixie Cafe's Baked Squash

You wll love this-even if you don't care for squash!

  • Total Time: Abt 40 min

Ingredients:

5 lbs Medium Yellow Squash
2 Eggs-beaten
1 cup Breadcrumbs, plus extra for topping
2 Tbsp Chopped Onion
1 stick Butter-softened
¼ cup Sugar
1½ cup Cheddar Cheese
Salt & Pepper, to taste
Nonstick Spray

Directions:

Wash & trim squash and cut into large chunks. Place in a large saucepan with enough boiling water to cover. Return to boiling, reduce heat and cook until tender (abt 10 min). Drain then mash.

In a large mixing bowl, combine squash, eggs, 1 C breadcrumbs, onion, butter, sugar, salt and pepper. Pour into a greased (or sprayed) 3 QT casserole dish and sprinkle with cheese and remaining breadcrumbs.

Bake @ 350 degrees until lightly browned (abt 15 minutes.

*note: you can also add 1 LB browned groung beef or sausage to make this a nice meal. Another variation is to add 1 jalapeno pepper with the cheese-no meat.
