Easy, Elegant Beef Stroganoff

Deli-roasted beef shortcuts this recipe! The beef is cut into cubes and combined with mushrooms & onions in a thickened sauce of beef broth & cream.
 

Ingredients

  • 4 slices (1/2" thick) Deli Roast
  • Beef (about 1 1/2-lb. total)
  • 4 tablespoons butter or margarine
  • 1/2 cup chopped onions
  • 2 cups fresh mushroom slices
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (14 oz) beef broth
  • 1/3 cup heavy whipping cream
  • 1/2 cup sour cream
  • 1 package wide noodles
  • Chopped fresh parsley, for garnish
 
Method

Cut beef into bite-size cubes; set aside. In a large skillet, melt the butter. Add the onions and mushrooms; saute 8 minutes. Sprinkle with flour, salt and pepper. Stir to combine. Add the broth and the cream; cook and stir constantly until thickened and bubbly. Cook the noodles as directed on the package; drain. Turn heat off stroganoff and stir in the sour cream. Arrange noodles on a serving plate and top with stroganoff. Chop parsley and sprinkle on top for garnish.

 

Notes: This is an old recipe my family always made but with sirloin slices or roast. It takes much longer to cook when it's done that way, so this is a version I tried with deli-cooked roast beef and was surprised how good it turned out.
