Easy Italian Couscous

Couscous mix is cooked with canned tomatoes, olives, artichoke hearts, & diced cooked chicken for a side dish. Omit the chicken for a vegetarian meal.Ingredients
- One 5.9 oz box quick-cooking couscous (parmesan flavored, if available)
- 1 1/4 cups water
- 2 teaspons butter or olive oil
- One 14 1/2 oz can petite-cut diced tomatoes
- 3 oz sliced black olives
- 4 oz canned artichoke hearts, chopped
- 1/2 cup diced, cooked chicken breast

Method
Combine water and butter or olive oil in large saucepan. Add flavor packet from the couscous, if desired. Add tomatoes, olives, artichokes and chicken. Bring to slow boil. Stir in couscous. Cover and let stand 5 minutes. Fluff with fork and serve.
Notes: Skip chicken for a vegetarian alternative. Add more water if too dry or let sit longer, if too soupy.
