Easy Italian Tomato Bisque

This easy soup, which works well as an appetizer, combines vegetable juice, oregano, garlic, onion salt, thyme and mozzarella cheese.
Ingredients
- 1/4 cup butter
- 1/4 cup chopped onion
- 1 large can vegetable juice
- 3/4 tsp. onion salt
- 1/2 tsp. dried oregano, crushed
- 1/2 tsp. garlic powder
- 1/4 tsp. dried thyme, crushed
- 1/2 cup milk
- 2 Tbsp. all-purpose flour
- Salt and black pepper
- Shredded mozzarella cheese

Method
In a saucepan cook onion in hot butter until tender. Stir in vegetable juice, onion salt, oregano, garlic powder, and thyme. Simmer for 30 minutes. Combine flour and milk; stir into saucepan. Simmer 15 more minutes. Season to taste with salt and pepper. Sprinkle each serving with cheese.
Notes: Goes well with garlic bagel chips.
