Easy Summer Zucchini Patties

Finely shredded zucchini, onion, and grated cheeses are combined with eggs & flour, cooked as patties, and served with a tomato-herb topper.
 

Ingredients

  • Patties:
  • 3 cups grated (organic) zucchini
  • 3/4 cup minced (organic) onion
  • 1/4 cup grated parmesan cheese
  • 1/4 cup grated romano cheese
  • 1/2 cup all-purpose flour
  • 3 (organic) eggs
  • 1/4 teaspoon fresh oregano
  • 1/4 cup fresh parsley
  • Salt and pepper to taste
  • Vegetable oil
  • Sauce:
  • 1 pint grape tomatoes, coarsely chopped
  • 1/4 cup fresh parsley
  • 2 Tbsp fresh lemon juice
  • 1/4 cup fresh basil
  • 2 Tbsp extra virgin olive oil
  • Salt and Pepper to taste

Method

Mix all the ingredients for the patties (except oil) in a large bowl until well blended. Heat a small amount of the oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden. Place on a paper towel on a platter to remove excess oil. Makes approx. 18 patties. To make the sauce: Combine all sauce ingredients in a medium bowl, mix well, cover and refrigerate at least 30 minutes. Serve sauce as a topping for the zucchini patties.

 

Notes: In the recipe I call for "fresh" and "organic" whenever possible. Living in Chicago, we have a plethora of Farmers Markets that provide my produce for the week, so I pick up my ingredients from local farmers. Depending on where you live, just do the best with the ingredients you have, these patties are delicious either way! On warm summer nights, we serve these patties with the tomato topping as a main course and eat them with a nice big salad for a yummy healthy dinner.
