Easy Cheesy Mexican Casserole


This casserole has layers of tortilla chips, shredded cheese, and a mixture of ground beef, beans, tomatoes with chilies and Spanish rice.



Ingredients:

  • 1 lb ground beef
  • 1 15-oz can ranch-style beans
  • 1 10-oz can rotel diced tomatoes with green chilies
  • 1 1/2 cups Spanish rice mix, cooked
  • 2 1/2 cups shredded cheddar cheese or Mexican-blend cheese
  • 1 bag tortilla chips, slightly crushed

Method

Brown ground beef and drain off fat. Add the tomatoes, beans and cooked rice to the cooked beef. Heat through. Line a baking dish with chips, sprinkle with a layer of cheese, then a layer of the meat and rice mixture. Keep layering and end with a layer of chips and cheese on top. Bake in oven at 350 degrees about 20 minutes.

Notes: You may add more or less of each ingredient to taste.
