1 tablespoon of olive oil
1 cup of diced onions
2 teaspoons of minced garlic
2 cups of water
1- 11 oz. can of "Rotel Mexican Festival Diced Tomatoes with lime juice & cilantro"
1 - 4.5 oz can of chopped green chiles
1 - 8 oz can of tomato sauce
1 -11 oz can of Mexi-corn
1 tablespoon of "Knorr Chicken Flavor Bouillon"
2 cups of chopped, cooked chicken
Garnish:
1 cup of your favorite shredded cheese
Tortilla chips, crumbled
8 oz container of sour cream
In a 3 qt saucepan, heat the olive oil. Once hot, add the onions and garlic. Saute for 3 minutes. Add the water, diced tomatoes, chopped green chilies, tomato sauce, Mexicorn, and chicken flavor bouillon. Bring to a boil then reduce heat to low. Add cooked chicken. Simmer for 10 minutes. Garnish each bowl with cheese, tortilla chips and a dollop of sour cream..
Ready in 20 minutes from start to finish.
