Eggplant Pizza

Thin slices of eggplant, dipped in egg and coated with seasoned cornflake crumbs, are baked and layered with tomato, mushrooms, onion & mozzarella.
Ingredients
- 1 eggplant
- Egg product, or 1 egg beaten with 1 Tbsp water
- Crushed corn flakes seasoned with 1 tsp oregano, 1 tsp dried Italian seasoning, and 1/4 tsp cayenne pepper
- Tomato, chopped
- Onion, chopped
- Mushroom slices
- Mozzarella cheese

Method
Peel and slice eggplant about 1/4" thick, dip in egg substitute or egg wash and coat in seasoned, crushed cornflakes. Place coated eggplant on an oiled rack and then place rack on a cookie sheet; bake at 400 degrees for 10 minutes. Turn slices over, and layer them with tomato, onion, mushrooms and cheese. Bake 10 minutes more or until eggplant is crispy.
Notes: This can be used for lunch, dinner, snack or cut in quarters as an appetizer. It is nutritious, versatile, healthy and quick.
