Eggplant Sandwich

This is truly a sandwich made with eggplant. The eggplant is sauteed with balsamic vinegar and garlic paste. What a tasty vegetarian meal.
 

Ingredients

  • 2 eggplant
  • 2 tbsp olive oil
  • 1 tsp garlic paste
  • 3 tbsp balsamic vinegar
  • Salt to taste
  • Dry rosemary to taste
  • Oregano to taste
  • 2 tbsp olive oil
  • 6 slices all wheat sandwich bread
  • 1/2 bar cream cheese, softened
  • 1/2 pound Italian cheese, shredded
  • 3 leaves romaine lettuce

Method

Cut unpeeled eggplant into long thin slices and place slices in a large bowl with water and salt, for 15 minutes, then drain. In a nonstick pan add olive oil, 1 tbsp balsamic vinegar and heat on medium until hot but not boiling. Add garlic paste, eggplant slices and mix. Turn when one side is golden and cook until second side is golden. Let eggplant rest 3-5 minutes on paper towels. On a separate plate, mix rosemary, oregano, 2 tbsp balsamic vinegar, olive oil and salt- mix well. Take each slice of eggplant and pass it through mixture and then set aside. Take slices of bread and spread with cream cheese. On each slice place slices of eggplant, then add a layer of Italian cheese over eggplant, cover with other slice of bread and microwave 1 minute. Let cool for 1 minute, then add lettuce.
