European Bistro Sandwich

This hot open-faced sandwich is piled with Brie cheese, sliced tomato, avocado, and red onion.
 

Ingredients

  • 4 thick slices multi-grain bakery bread
  • 1/2 cup prepared pesto
  • 8 ounces Brie cheese, thinly sliced
  • 2 Roma tomatoes, thinly sliced
  • 1 avocado, peeled, pitted and cut lengthwise into 8 slices
  • 1/2 of a red onion, thinly sliced

Method

Preheat oven to 400 degrees. Place bread slices on a baking sheet. Spread 2 tablespoons of the pesto on top of each slice of bread. Place sliced Brie on top of the pesto. Bake about 3 minutes or until the cheese melts. Remove from oven and top with tomato, avocado, and onion.

 

Notes: Notes: This sandwich doesn?t have a top piece of bread, so it is best to eat with a fork and knife like Europeans eat their sandwiches. For people that are watching their carb intake this also cuts down on the number of carbs. Being open-faced also allows you to look at the beautiful colors in the sandwich and savor it a little longer, but if you feel the need to top it you can always toast 4 extra pieces of bread for the top. This recipe is so delicious you won?t even notice that it is meat-less!
