Fabulous Fajita Melt


If you have a little time this open faced sandwich is a great choice for dinner tonight. Crusty sourdough topped with steak, onions and peppers, and pepper Jack cheese, huge!



Ingredients:

  • 1 very small London broil steak
  • 1 lb pkg pre-sliced onions and bell peppers with cilantro  
  • 8-16 pieces sliced sourdough bread
  • 16 slices jalapeno pepper Jack cheese, or 2 per sandwich
  • Butter
  • Soy sauce, optional

Method

In baking dish or foil, add a few slices of butter, and all vegetables. Place steak over vegetables; add slivers of butter atop steak and a few shakes of soy sauce. Broil for 5 minutes. When steak is brown on top, remove from oven. Set oven temperature to 250 degrees. Spoon vegetables from under the steak to over top spreading them around to marinate steak. Replace in warm oven and bake for 35-40 minutes until vegetables are just about cooked. If you are using chicken, bake an extra 10-15 minutes. Remove steak from oven and slice against the grain in very small pieces. Note the steak will still be rare. Place steak pieces on lightly toasted sourdough bread. Spoon buttery cilantro infused vegetables over steak, top with two slices of jalapeno pepper Jack cheese. Replace in warm oven and at 350 degrees for 10-15 minutes until cheese is melted and bread is toasty. Cut in half.

Notes: For ultimate indulgence, spread chipotle mayonnaise onto toasted bread before adding toppings. Your taste buds with thank you. Serve with a refreshing southwest salad with fresh corn and salsa for a feast of the eyes and mouth. Drizzle hot sauce around the plate to make it gourmet. Drizzle creamy chipotle salad dressing along with, if you really want to impress. Slice open face sandwich into small pieces and serve as an appetizer with sour cream.
