Firecracker Shrimp

Skewered shrimp are brushed with a mixture of apricot preserves, olive oil, soy sauce, and spicy red pepper flakes and grilled to perfection.

  • Servings: 4

Ingredients:

12 Metal, bamboo or wooden skewers
1 cup Apricot or Peach Preserves
2 tsp Extra-virgin Olive Oil
2 tsp Soy Sauce or Soy Sauce Substitute
1 tsp Crushed Red Pepper
48 Large Uncooked Shrimp, cleaned and deveined, with tails left on

Directions:

Preheat the grill to medium heat. If using wooden or bamboo skewers, soak in water for 20 minutes. In a medium bowl, combine the apricot preserves, oil, soy sauce, and crushed red pepper; mix well. Thread 4 shrimp onto each skewer. Brush with apricot mixture and grill over medium heat for 2 to 3 minutes per side, or until shrimp are pink and cooked through. Yield: 12 skewers

Helpful Tips:

I admit, these are good with red raspberry preserves, too. Something about the spice, salt and raspberries that just makes them scrumptious.
