Red tomatoes, orange and yellow sweet peppers, green herbs, and white feta cheese make up the five colors in this refreshingly simple salad.
Cook orzo according to package directions; drain well and rinse with cool water.
In a large bowl toss together cooked orzo, sweet pepper, tomatoes, onion, feta cheese, basil, and parsley.
In a medium bowl whisk together lemon juice, olive oil, garlic, salt and pepper; pour over salad and toss. Let stand 20 minutes. Toss again and serve.
Notes:
Add boiled, peeled shrimp to make it a main dish.
