Forbidden Chicken Sandwich

A quick saute of chicken, pepper and mushrooms is all you need to make this tasty sandwich--top with melted cheese and serve in a toasted bun.
 

Ingredients

  • 2 lb boneless skinless chicken breast
  • 1 16 oz Italian dressing
  • 2 green, orange and red peppers, cut into lengthwise strips
  • 2 8 oz packages sliced or capped mushrooms
  • 1 hoagie style or sub buns
  • 2 8 oz bags shredded cheese
  • Ranch or California French dressing

Method

Using a marinating needle, inject 1-2 oz of Italian dressing into each chicken breast. Using an electric grill or skillet, brown chicken for 7-10 minutes depending on thickness of chicken. Pour a little Italian dressing into skillet and saute peppers and mushrooms until tender but still slightly crisp. Wrap buns in foil and toast for 2-3 minutes on a cookie sheet at 375 degrees. After browning chicken, cut into strips 4-5 inches long by 1 1/2 inches wide. Add chicken to peppers and mushrooms and saute for another 3-5 minutes, stirring occassionally. Leaving buns in foil, place an equal amount of chicken, peppers and mushrooms in each open bun. Cover ingredients with shredded cheese. Place back into oven for 2-3 minutes or until cheese has melted. Remove from oven and top with ranch or California dressing.
