Fried Green Tomatoes


Green tomatoes are coated and fried in this side-dish recipe, but you can easily adapt it if only red tomatoes are available.



Ingredients:

  • 3/4 cup all-purpose flour  
  • 1 tsp sugar  
  • 1/2 tsp salt  
  • 1/4 tsp pepper  
  • 4 med-size green tomatoes (1) sliced 1/2 inch thick  
  • 2 Tbsp butter or margarine

Method

1. Mix flour, sugar, salt, pepper on piece of waxed paper. Coat tomatoes w/mixture. 2. Melt 1 Tbsp butter in large skillet over med. heat. Add tomatoes in single layer. 3. Cook 3-4 minutes per side until lightly browned and just tender. Remove to serving platter. Repeat w/remaining butter & tomatoes. *If only red, ripe tomatoes are available, decrease sugar by 1/2 and cooking time by 1/2.
