Green tomatoes are coated and fried in this side-dish recipe, but you can easily adapt it if only red tomatoes are available.
1. Mix flour, sugar, salt, pepper on piece of waxed paper. Coat tomatoes w/mixture.
2. Melt 1 Tbsp butter in large skillet over med. heat. Add tomatoes in single layer.
3. Cook 3-4 minutes per side until lightly browned and just tender. Remove to serving platter. Repeat w/remaining butter & tomatoes.
*If only red, ripe tomatoes are available, decrease sugar by 1/2 and cooking time by 1/2.
