Game Day Spicy Beef Sliders

These spicy little burgers are a great appetizer for any casual get together.
 

Ingredients

  • 1 pound ground chuck
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon ground black pepper
  • 8 tablespoons butter at room temperature, divided
  • 1 large clove garlic, minced
  • 1/2 tablespoon dried parsley leaves
  • 6 two inch round rolls, split
  • 1 1/2 cups finely diced yellow onion
  • 2 jalapeno peppers, finely chopped
  • 1 1/2 cups shredded pepper jack cheese
  • 6 thick slices hickory smoked bacon, cooked crisp and broken in half

Method

Place ground chuck, seasoned salt and black pepper in a large mixing bowl. Lightly toss together with a fork, trying not to overwork meat. Divide meat into 6 equal portions and form into patties about 3 inches in diameter, then set aside. In a small mixing bowl, combine 6 tablespoons butter, garlic clove and parsley, then mix thoroughly with a fork. Spread an equal portion on cut side of each roll half and set aside. Preheat a nonstick electric griddle to 350 degrees. Melt 2 tablespoons butter on hot griddle. Stirring occasionally, saute onions and jalapeno peppers in hot butter for 5 minutes or until onions are translucent. Remove from griddle and keep warm. Place patties on hot griddle and cook 2 minutes. Flip burgers then cover with onion mixture and cheese. Slide burgers to one side of griddle and continue to cook an additional 2 minutes. Meanwhile, place rolls, buttered side down, on other side of griddle and cook 2 minutes or until lightly toasted. To serve, place two roll halves on a 10 inch serving plate. Top each with a burger, including an equal portion of spicy onions and cheese. Add bacon and another roll half, then serve immediately. Repeat the process for remaining sliders.
