Garden Goulash

This cheesy vegetable and pasta dish is vegetarian friendly for a meal or can make a great side dish.Ingredients
- 3 carrots
- 2 stalks celery
- 1 medium onion
- 2 cloves garlic
- 2 cups elbow macaroni
- 3/4 cup sharp cheddar shredded cheese
- 3 tbsp butter or margarine
- 1 cup garden vegetable spaghetti sauce, your favorite brand

Method
Place peeled carrots, celery, onion and garlic in food processor. Whirl until chopped. Saute in 3 tbsp butter or margarine until translucent. Meanwhile, cook macaroni according to package and drain. Transfer macaroni back into saucepan and place cheese on top of macaroni. Add vegetable mixture, then spaghetti sauce, toss and enjoy.
