One of my favorite cold-weather casseroles. Pasta, cheese, and veggies are nice and filling.

8 oz Penne Pasta
½ cup Chopped Onion
1 Tbsp Olive Oil
1× 15-oz can Diced Tomatoes, you can use tomatoes with garlic, basil, and oregano, or add about ½ teaspoon of each to mixture
1× 15-oz can Corn, drained
1× 15-oz can Green Beans, drained
1 can Cream of Mushroom Soup
2 cups Cheese, any works; i usually use cheddar or monterey jack


Preheat oven to 350 degrees. Grease a 2-quart baking dish.

Cook pasta per package directions. Drain. Saute the onion in the olive oil until tender. Add the tomatoes, corn, green beans, soup, and 1 cup of the cheese. Mix well.

Combine pasta with the vegetable mixture. Transfer to baking dish. Top with remaining cheese. Bake 20 minutes or until hot.
