Gin Gin Soup

A rich broth loaded with cubed chicken, cabbage, chickpeas, celery and carrots--perfect for a cold winter's night.
Ingredients
- 2 tbsp olive oil
- 2 boneless chicken breasts, cubed
- 1 large onion, chopped
- 2 gloves garlic, minced
- 3 stalks celery, chopped
- 3 large carrots, chopped
- 1 head cabbage, chopped
- 1 large can chickpeas
- 2 quarts chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Method
Place olive oil in a large stock pot and heat on medium high. Add chicken, onion, celery and carrots. Saute 5-10 minutes, then add garlic and saute 1-2 minutes. Add chicken stock, bring to a boil, then add cabbage, salt and pepper. Simmer until cabbage is soft, about 15-20 minutes, and serve.
