Glazed Broccoli and Carrots w/ Raisins and Walnuts

Cooked carrots and broccoli are combined with raisins, honey, butter, lemon juice and nuts.
 

Ingredients

  • 3 medium carrots, peeled, diagonally sliced 1/4-inch thick
  • 2 T butter
  • 1/4 Cup raisins
  • 1/3 cup honey
  • Water
  • 1 medium to large head broccoli, cut into florets, cooked until crisp- tender
  • Juice of 1 lemon
  • 1/4 Cup walnuts

Method

Combine the carrots, butter, raisins and honey in a saucepan; add enough water to just cover the carrots. Bring the water to a boil, reduce the heat to a simmer and allow the carrots to cook, uncovered, until most of the water has evaporated and the carrots are tender. Add the cooked broccoli, the lemon juice and walnuts and toss to combine well.
