Gluten Free Meatloaf

The comfort food goodness of meatloaf always has been in our family’s rotation of go-to meals. When I was diagnosed with celiac disease several years ago, our meatloaf recipe was the first I converted into something great that would work for me. I like the hint of smoky flavor that the gluten free pretzel crumb adds.

2 Pounds 80/20 Ground Beef
Cups Gluten Free Salted Pretzels Chopped Into Crumbs In Food Processor
1 Yellow Onion Chopped
1 Tsp Coarsely Ground Pepper
½ Tsp Kosher Salt
2 Tsp Dry Ground Mustard
¾ Cup Whole Milk
2 Large Eggs
2 Tbl Gluten Free Worcestershire Sauce


Preheat oven to 350 degrees. Lightly mix milk, eggs, and Worcestershire sauce in a large mixing bowl. Add ground beef, pretzel crumbs, onion, ground mustard, salt, and pepper to the bowl. Mix with hands until all the ingredients are well combined. Form into an oval-shaped loaf in a 13 X 9 baking dish. To make sure there is a crunchier, flavorful crust, be careful not to let the loaf touch any side of the dish. Cook the meatloaf for one and a half hours or until internal temperature reaches 170 degrees.
