Goat Cheese and Tomato Sandwich

Who knew a simple, vegetarian sandwich could be so satisfying? Just toast the bread, add goat cheese, tomatoes and seasoning.
 

Ingredients

  • 2 slices wheat bread
  • Goat cheese
  • 1 large tomato
  • Parsley flakes
  • Olive oil
  • Salt and pepper to taste

Method

Toast bread. Spread a good amount of goat cheese onto bread. Slice tomato into 4 slices and add 2 tomato slices to each slice of bread. Add salt and pepper to tomato. Drizzle olive oil onto sandwich and grind parsley flakes onto sandwich.

 

Notes: This sandwich is best when served and eaten open faced.
