Going Greek Salad


Greek salad with a interesting combination of sweet and salty flavors. Low fat dressing makes it an extra healthy choice.



Ingredients:

  • 1 lb triple washed baby spinach
  • 4 roma tomatoes
  • 1/2 lb sliced button mushrooms
  • 1/4 cup chopped kalamata olives
  • 1/4 cup dried cranberries
  • 1/2 cup crumbled, feta cheese
  • 1/2 med sized red onion, diced
  • 1 cucumber, seeded, peeled and sliced
  • 1/3 cup low-fat raspberry vinegarette
  • 4 warmed whole wheat pitas, cut into quarters

Method

Simply toss all ingredients, except the dressing and pitas, into a large bowl. Before serving, toss the salad with the dressing. Serve warmed pitas on the side.

Notes: This recipe has a slight twist on the usual Greek salad. The tart chewiness of the cranberries makes a wonderful complement to the saltiness of the feta cheese.

Number of servings: 4 main or 6 side dishes
