Good Morning Pizzas


Whole wheat English muffins make this a healthy and fulfilling breakfast that is easy to make and easy to please.



Ingredients:

  • 4 whole wheat English muffins, split
  • 4 eggs
  • 8 slices cheddar cheese
  • 2 or 3 Roma tomatoes, sliced
  • Dash of pepper
  • Nonstick cooking spray

Method

Lightly beat eggs with pepper. Pour into a 9x13 baking dish. Soak English muffin halves in mixture, cut side down. Spray a skillet with non-stick spray. Heat English muffin halves, cut side down, on medium heat until egg is cooked. Flip and place 1 slice of cheese on each. Top with the tomato slices and place in a toaster oven or broiler until cheese is melted.

Notes: These pizzas are a protein-packed take on French toast. They are the perfect size for kids and easy to eat on the go.
