Cut hen in pieces and put in large pot. Cover with water and cook 11/2 to 2 hours or until tender. Add salt and pepper to taste. After chicken has cooked 1 hour, take out 3/4 cup broth and let cool. While chicken is cooking, place flour and salt in mixing bowl. Make a well in center. Add egg and pour in broth. Mix flour in from the sides until a ball is formed. Sprinkle dry flour on a clean white cloth or plastic pastry sheet. Put ball of dough on cloth and roll with rolling pin until real thin. Cut into 1” x 2” strips. Let stand 15 minutes. Remove chicken from broth when tender; skin and debone. Bring broth to rolling boil; drop dumplings in one at a time. Add chicken into dumplings for 10-15 minutes. Do not cover.
