Greek Turkey Salad

Vinaigrette with olive oil, lemon juice and vinegar give this turkey, feta and vegetable salad a light dressing of Greek flavor.
Ingredients
- 3 cups cooked chopped turkey meat
- 2 medium cucumbers, sliced thin
- 1 cup sweet onion, sliced thin
- 1/4 cup red onion, sliced thin
- 1/2 cup tomato, sliced thin
- 10 pitted Kalamata olives
- 1 1/2 cups crumbled feta cheese
- Garnish:
- 1/2 cup chopped green olive, pitted
- Greek Vinaigrette Dressing:
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 tablespoons white vinegar
- 2 tablespoons chopped fresh oregano
- 1 teaspoon fresh black pepper
- 1/8 teaspoon sugar

Method
In a large salad bowl, combine turkey, cucumber, sweet onion, red onion, tomato, olives, feta cheese and mix well. In a bowl whip olive oil, lemon juice, vinegar, oregano, black pepper and sugar. Just before serving, add vinaigrette dressing to salad and mix well. Garnish with chopped green olives.
Notes: You can used any kind of olives in this recipe. This is my own original recipe.
