These individual pizzas use pita rounds as crusts, topped with tomato, olives and feta, and drizzled with a cucumber & dill-flavored yogurt sauce.
Turn on broiler (on medium-high, if adjustable.) Line a sieve or strainer with a coffee filter, and pour in yogurt. Allow to drain while preparing remaining ingredients.
Lay the pita breads flat on broiler pan or heavy baking sheet. Rub with olive oil; sprinkle with garlic powder, salt, and oregano. Sprinkle tomato, olives, and feta over the pitas. Place under broiler for just a few minutes, or until edges are crisp and cheese is softened.
Meanwhile, grate the cucumber and squeeze gently in a paper towel to remove excess moisture. Mash garlic clove with salt. Stir in lemon juice, dill, olive oil, and pepper. Toss with cucumber. Stir in drained yogurt. Remove pitas from broiler, top with tzatziki sauce, and serve.
