Green Bean Delight

This colorful mix of cooked vegetables includes French-style green beans, bell peppers, tomatoes and mushrooms, seasoned with salad dressing and sprinkled with cheese.
 

Ingredients

  • 1 small tomato, diced
  • 1 small red bell pepper, diced
  • 1 small green bell pepper, diced
  • 1 small onion, diced
  • 1 pkg frozen french-style green beans, thawed
  • 1 lb. small portabello mushrooms, sliced
  • 2 tbsp butter
  • 2 tbsp Italian salad dressing or desired dressing
  • 2 tbsp water
  • 1 cup shredded provolone or mozzarella cheese
  • Salt and pepper to taste

Method

In large skillet, melt butter; saute peppers and onion until tender. Add the mushrooms, beans, water, tomatoes, and salad dressing. Bring to a boil; cover and simmer 5 to 6 minutes. Top with cheese and melt.

 

Notes: About twenty years ago I made this recipe up for Christmas dinner, it has been with us ever since. Hope you try it and enjoy it.
