Green Salad with Berries

Bright green spinach and lettuce marry perfectly with fresh strawberries, raspberries and a light poppy seed dressing.
Ingredients
- 1 7-10 oz bag fresh baby spinach
- 1 10 oz bag Italian mixed salad greens
- 1 pint fresh strawberries, hulled and thinly sliced
- 1 pint fresh raspberries
- 3-4 tablespoons toasted pumpkin seeds
- Poppy Seed Dressing:
- 3/4 cup sugar
- 1 teaspoon onion juice
- 1 teaspoon dry mustard
- 1 cup salad oil
- 1 teaspoon salt
- 2 teaspoons poppy seeds
- 1/3 cup cider vinegar

Poppy Seed Dressing: Place all ingredients, except poppy seeds, into a blender or jar with a lid and shake until thick and smooth. Add poppy seeds, shake again, and serve. Store in fridge and reshake as needed. Salad: In a large bowl, combine baby spinach, mixed greens, strawberries and raspberries. Shake dressing just before using. Add enough to just coat salad, then gently toss. Scatter with pumpkin seeds just before serving.
Notes: Instead of tossing salad with dressing, I like to serve the dressing in a separate bowl and let each person take as much as they like. The salad stays fresh longer that way, too.
