Grilled Iowa Pizza


Grilled vegys and two kinds of cheese served on a grilled pizza crust--a great way to use fresh summer vegys! Would make a great appetizer also.



Ingredients:

  • 1 pre-made pizza crust
  • 2 cups shredded fontina cheese
  • 1 cup parmesan cheese
  • 1 cup garlic olive oil
  • Grilled corn on the cob (4 ears)
  • Grilled red onions (2)

Method

Grill 4 ears of corn on the cob and cut kernels off the cob. Grill red onions. Brush grill with garlic olive oil. Brush pizza with garlic oil and grill pizza on one side lightly - about 2 minutes. Remove crust to cutting board and brush grilled side of pizza crust with garlic olive oil. Sprinkle a small amount of fontina and parmesean cheeses on pizza crust then top with grilled corn and slices of grilled red onions. Cover crust with remaining cheese. Brush additional oil on grill and grill pizza until cheese has melted - do not burn. Drizzle with olive oil and top with fresh basil leaves.

Notes: Liberally oil grill to avoid sticking.
