Grilled Veggies


A variety of vegetables, including zucchini, yellow summer squash, mushrooms, onion, red and green sweet peppers and eggplant are threaded on skewers and grilled, brushing occasionally with olive oil.



Ingredients:

  • Zucchini, cut into 1-inch slices    1 pound
  • Yellow summer squash, cut into 1-inch slices    1 pound
  • Mushrooms    1 pound
  • Sweet onions, cut into chunks    1 pound
  • Green bell peppers, cut into squares   1 pound
  • Red bell peppers, cut into squares    1 pound
  • Eggplant, cut into 1-inch cubes   1 pound
  • Olive oil
  • Salt and pepper to taste
  • Skewers

Method

Alternately thread the vegetables onto skewers, placing first the zucchini, then the mushrooms, onions, green peppers, onions again, eggplant, red peppers, and end with green peppers again. Brush with olive oil; sprinkle with salt and pepper. Grill until done, about 20 minutes, brushing occasionally with more olive oil.
