A yummy mixture of mashed yams, apple, mint, basil, and cabbage tops this unique ham and cheese sandwich.
Ingredients
- 1 1/4 cups shredded cabbage
- 2 tablespoons chopped fresh mint
- 2 tablespoons chopped fresh basil
- 1 tablespoon olive oil
- 1 1/2 teaspoons red wine vinegar
- 1/4 teaspoon celery salt
- 1/4 teaspoon black pepper
- 1/2 cup chopped, unpeeled apple
- 1/2 cup mashed canned yams
- 1/3 cup mayonnaise
- 5 tablespoons snipped mango chutney
- 8 slices seven-grain bread
- 4 slices red onion
- 12 slices honey-baked cooked ham
- 8 slices Muenster cheese

Method
In a bowl combine cabbage, mint, basil, oil, vinegar, celery salt, and pepper. Stir in apple and yams; set aside. In a small bowl combine mayonnaise and chutney. Spread one side of each bread slice with mayonnaise mixture. On 4 slices of the bread layer 1 slice of onion, 3 slices of ham and 2 slices cheese. Divide cabbage mixture among the 4 slices. Top with remaining bread slices.
Notes: Deli roasted pork may be substituted for ham
