Hashbrown Chicken

This recipe has a down home feel with the hashbrowns being smothered in cream of mushroom chicken and Swiss cheese. What a flavor combination.
Ingredients
- Shredded hashbrowns
- Oil
- Butter
- Onions
- Shallot pepper
- Swiss cheese
- Chicken breast, diced
- Olive oil
- Onions
- Cumin
- Garlic
- Salt
- Turmeric
- Cayenne Pepper
- Cream of mushroom soup

Method
Put oil in pan and heat. Add onions and hashbrowns. Put butter pats on top of hashbrowns, season with shallot pepper. Cook and turn until golden brown and crispy. Turn off heat add Swiss cheese to top and set aside. Cook chicken in olive oil, garlic and onions, season to taste with spices. After chicken is cooked, place over hashbrowns and set aside. Add cream of mushroom soup to pan with chicken drippings, stir until hot. Add more seasoning if desired. Pour over top of chicken and hasbrowns. No real amounts needed, this can serve one or 6, all depends on how much of everything you use and who is eating. Seasoning is to taste; add more oil and seasoning prior to soup if not a lot left in pan after removing chicken.
